Most, if not all of these recipes I came up with while stationed at Guantanamo Bay, Cuba, 2005–2006. The recipes came to me while sleeping, standing in formation or while at post. Through experimenting with these recipes I acquired a fan club among my comrades. Even though they enjoyed what was made, most of my comrades had their favorites. I enjoyed cooking as much as they enjoyed eating. There were odd times when I was cooking. 1700 hours (5 p.m.) or 0600 hours (6 a.m.). Yes, we were eating BBQ’d food at 6 a.m. That was usually when we were coming off the night shift. Sometimes the mess hall (or dfac as the army calls it) wasn’t something that sounded good half the time. It brought a sense of family and camaraderie amongst us since we were the only family we had. True, we were emailing and phoning home on a regular basis; but it just wasn’t the same. And it is true that the way to a man’s heart is through his stomach. I hope you enjoy these recipes as much as we did.
